Over-the-Rainbow Cupcakes

At my niece's birthday party we had rainbow cake. My sister had found the recipe here. I was intrigued. I loved the fun colors, and the happiness that seemed to radiate from the cake. I knew I had to try making one myself! I made one for a party I went to and it was a big hit. Then I was asked to make another one for a Wizard of Oz themed Relief Society activity. I decided that cupcakes would be easier to serve than a cake. It's actually a much more simple process than you would think.

1. Make any white cake mix, using only egg whites. This one happens to be my favorite.



2. Split the cake batter into six bowls (as equal as possible). I left out yellow, because I felt five colors in a cupcake was adequate.



3. Add the food coloring. (the recipe tells you exactly how many drops to add to get the vibrant colors. It's fool proof!)



4. Mix well.



5. Drop a bit of each color into the cupcake cups, being careful not to stir - you don't want brown cupcakes! (they will even out as they bake)



6-8. Bake, cool and frost.





9. Enjoy your cheerful cupcakes!



Cupcakes were a bit more tedious to make than a cake, but still not bad. This recipe is a fun one, and a keeper!

Those turned out great! And I like that you can actually see the colors in the cupcake papers. So cool

I just love this recipe! You really can feel the happiness radiating from the bright, cheerful colors. Your cupcakes look like they turned out fantastic!
