You Had Better ¨Belize¨ It!

A shuttle picked us up at 5:00 on Saturday, June 23rd (backpacking requires lots of really early mornings!)  We drove for about 4 hours and got to the border of Guatemala and Belize.  We went through customs and got another stamp in our passports before climbing back on the shuttle and continuing on our way. 


Another hour later we reached Belize city and transfered to a water taxi.  We sailed through the water for 45 minutes before reaching Caye Caulker, and catching a glimpse of paradise.  This is what greeted us from the dock:


We were so excited to be there!  It seriously felt like a heaven.  Very warm, palm trees everywhere, no cars on the island, and very relaxed and laid back.  We got off the boat and imediately found a place to have lunch.  I fell in love with the restaurant! It had no floor (just the sand) or walls.  Just a roof!  You could see the ocean from the table, and most of the tables didn´t even have chairs, just hanging swings.  To top it off, the food was excellent, and probably the best thing I ate on the entire trip!  We made some friends from Canada on our shuttle trip, and hung out with them during our time in Belize. 


After lunch we found a hotel (we even paid extra for a nicer place with air conditioning, totally worth it!) changed into our swimsuits, and headed to the beach.  Caye Caulker is part of the Caribbean, and the water is divine!  Not to hot, not to cold, you can jump in and swim to your hearts content.  


After swimming for a while we saw an ice cream shop and decided we HAD to have some.  When I saw ´´Chocolate Truffle Cake´´ on the menu, I was sold.  I was in paradise, and I wanted to eat some divineness!  Plus, it was the day after my birthday and figured it would count as my birthday cake.  I sat on a beautiful beach and ate my simply divine birthday cake.  Heaven!


We swam around until it got dark, and then roamed around the island.  It´s not very big, so it doesn´t take long to become comfortable and know where you are.  


Sunday we relaxed and did some more roaming around the island. 


We sat on the edge of the edge of the Caribbean sea and  wrote in our journals,  it was lovely!  I made a goal to write in my journal every day of my Guatemalan trip this summer (I´m not very good at journaling) and so far have not missed a single day! 


We had heard that the sunsets at Caye Caulker were amazing, so we searched the island for the best spot to enjoy the sunset, and we found it!  Check it out:

Ditto ditto ditto. Wish I was there too! It looks and sounds like paradise! The picture of you journaling on the beach looks like it belongs in the Ensign. The pic of Ryan with the starfish is awesome too-- that's REAL ocean!
